Sirloin Steak with Pomegranate and Feta Salad


This is one of my favourite recipes at the moment: Sirloin Steak and Pomegranate, Feta Salad with a fresh Herb Dressing!

So fresh and light, but savoury at the same time, which makes it a perfect lunch or dinner to me.


It is also very quickly made and I'm sure a perfectly cooked, medium-raw steak impresses anyone you cook for.

Ingredients 2 Sirloin Steaks

1 Red Pepper, finely sliced 1/2 Red Onion, finely sliced

2 Gloves of Garlic, crushed 200 g Feta Cheese, crumbled

150 g Pomegranate

Salad leaves Fresh Parsley

Fresh Coriander

Fresh Mint

4 tbsp Extra Virgin Olive Oil 1/2 Lemon Salt Pepper

Method 1. Slice half a red onion and one red pepper finely. Crush 2 cloves of garlic and add everything to a hot pan with some olive oil. Pan fry for approx. 4 minutes, until caramelised and season with salt and pepper.

Transfer the mix into a large salad bowl to cool down.


2. Once veggies have cooled down, add the pomegranate seeds, crumbled Feta and salad leaves into your bowl.


3. In the meantime take a large frying pan and put on high heat with some butter.

As soon as the pan is hot, place your steaks in the pan and cook for 2 minutes on each side.

Take the steaks out and place them on a chopping board. Cover with foil and rest for 5 minutes.

Now season the meat with salt and pepper and slice, ready to serve.

Dressing Add 4 Tbl of olive oil, 3 Tbl water, 1/2 Bundle of Parsley, 1/2 Bundle of Coriander, 1/4 Bundle of Mint and the juice of half a lemon to a blender and mix well.


Finish

Pour the dressing over the salad and plate everything up. Now enjoy!
